Description
Hitachino Nest Japanese Classic Ale — Ibaraki, Japan, 7% ABV. Kiuchi Brewery's most historically charged beer — a deliberate reconstruction of Japan's pre-war brewing tradition, when high hopping rates and cedar cooperage defined the category before lighter lager styles took over. Aged in cedar sake barrels sourced from the brewery's own sake-making operation, the beer carries a unique woody-resinous character alongside pronounced hop bitterness. Deep amber in colour; the nose layers earthy cedar, resinous pine hops, and a subtle koji-like sweetness from the barrel contact. Full-bodied and assertive at 7% ABV, with a long, warming finish.
On-trade positioning: Best positioned as a specialist listing for venues with a serious craft or Japanese-cuisine focus. An authentic conversation piece — the sake-barrel story and the historical brewing revival are compelling talking points for staff.
