Hitachino Nest Daisy Ale — Ibaraki, Japan, 5.0% ABV. Inspired by the daisy flower, this flavoured ale from Kiuchi Brewery is brewed with floral herbal tea and honey. Chamomile is lightly steeped in the wort like tea, letting floral notes carry through fermentation and maturation. Dry hopping preserves a fresh, fruity hop aroma. Pours clear golden with a fine white head. The nose is all sweet fruit juice and chamomile blossom; the palate is smooth and clean, finishing light and clear with subtle floral notes. IBU 15 — low bitterness makes it accessible to guests who typically prefer wine or cocktails.
On-trade positioning: An accessible craft beer for guests who might not normally choose beer. The chamomile-honey profile crosses over to the wine and cocktail audience — a strong gateway SKU for craft-beer-adjacent menus. Pairs well with light fare, salads, shellfish and mild desserts.
